                                                  Soy-Eggplant Kiima
What do you need-
1 cup soy chunks(granules), 1 big eggplant, 10-12 buds garlic, a little oil, a tablespoon ghee, a small spoon nigella seeds,  a teaspoon cumin seeds, 2 inch ginger piece, 2 finely chopped onions, 2 finely chopped tomatoes,  3 finely chopped chillies, 1 tbsp coriander powder, 1/2 teaspoon aamchoor, a small spoonful of garam masal, a teaspoon red chili powder, a teaspoon licking masala, salt to taste, a lemon juice, 1 large spoonful finely chopped.
Make like this-
Boil water in the pan. pouring soy chunks in it, boil it upto 5 minutes, then remove and cool. remove the water after 15 minutes. pour 6-7 garlic buds in eggplant, then add oil in eggplant and fry it on a pan and fry it. heat the ghee in a non stick pan. add nigella and cumin seeds to it. finely chop the ginger and the remaining garlic in the pan. after frying , add onion, tomatoes and green chilies and cook for two to three minutes.peel and roast eggplant.heat  a littile ghee in the pan. add coriander powder, aamchoor, garam masala powder, red chill powder, chaat(chut) masala and salt to it. now put soy chunks and eggplant together.serve by adding lemon juice and green coriander in it
